Cookies with cream or Biscotti all panna is a great cookie to have as a breakfast or for an afternoon snack and preferably not when you are on a diet.. ahaha.. They go well with coffee, milk or tea.
The recipe is super easy and I found it to be fun to let my son who is almost three help me with the recipe.

By the way, here in Italy, we always have something sweet for breakfast like these cookies or a torta, so usually on Sunday or Monday, I make either a torta ”cake” or biscotti for the week. Sure, it is easier to buy cookies or a cake at the store but usually those are full of who knows what..
Biscotti alla panna
Ingredients
2 cups of All Purpose Flour
1/2 cup of sugar
1/2 ounce of melted butter
1 egg
200 ml or 1 cup of cream not sweetened
A pinch of salt
1 teaspoon of baking powder
How to prepare

In a bowl add the softened butter and sugar and mix with a wooden spoon. I didn’t have so I used a fork and it worked just fine.

Beat the egg in a separate bowl.

Add the beaten egg to the butter and sugar mixture.

Add the cream and mix

Add the baking powder and flour and mix.

Once mixed, put the dough in the refrigerator for 1 hour.

After 1 hour in the refrigerator, knead the dough on a floured surface.

Roll into cords like so, more or less the width of a finger.

Cut pieces into 10 cm or 4 inches

Make a ring and put on a cookie sheet covered with baking paper/ Bake at 180C/350F for 15-20 minutes depending on your oven of course.

Cool biscotti alla panna on a wire rack and after enjoy with a glass of milk or tea.
