Earlier this morning, Vittorio, not to get confused with my personal trainer who has the same first name but Vittorio, my neighbor, who invited me over to his home as he was making a few different sauces and wanted to show me..
Unfortunately, I do not have the step by step photo blog for this recipe but don’t worry because it is really easy and takes about one hour from start to finish and did I mention its so healthy? Perfect for my diet, I’d say my trainer would approve.
It’s great for gnocchi or pasta and since I can’t have either, I think I would just eat it by the spoonfuls. Haha.
Ok, so you’ll need :
- 6 Zucchini
- 30 Datterini Tomatoes
- 4 Carrots
- 2 Leeks
- 2 White Onions
- 1 CLOVE of Garlic
- 4 Stalks of Celery
- 2 Bell Peppers ( any color)
- Pepper and Salt to taste
If you’d like, you can add anchovies. And if you do, add about 10 filets of Anchovies that you can buy in the jar in the supermarket.
So, you’ll chop up all the above ingredients, throw them in the pan and keep it on medium heat for an hour. Stirring ever 15 minutes.
You don’t need to add any water. As the veggies cook, they’ll produce their own sugo or sauce.
